Chicken Boti Kebab (Chicken Spicy Boneless Kebab)

Chicken Boti Kebab is soft and juicy chicken chunks coated in a mildly spicy and tangier marination and is definitely a crowd-pleaser. It tastes good and is very easy to make. This Chicken snack is everyone’s favourite and is a part of every gathering or party. Boti Kebab doesn’t require many spices; its marinating is a one-bowl recipe. It may be a great appetiser, and it is easy to make.

1. About the recipe 

Boti Kebab is a variety of kebab in which pieces of chicken are marinated with spices, yoghurt, lemon juice and fried onions. These kebabs can be cooked in an oven or barbecue, and I am making it on the pan here. Chicken Boti Kebab is a perfect starter or appetizer for a big gathering or party. These kebabs can be enjoyed with onion rings and green chutney. Making chicken boti kebab at home is not that difficult. All you need is the correct marination, ingredients, and method. Use my simple recipe for the best homemade chicken boti kebab.

2. Ingredients

  • 500gm boneless chicken chunks
  • 2 tablespoons of ginger garlic paste
  • 1 teaspoon of red chilli powder
  • ½ teaspoon of garam masala powder
  • ½ teaspoon of black pepper powder
  • 100gm fresh yoghurt
  • 1 onion thinly sliced and fried
  • 1 teaspoon of cornflour
  • 2 teaspoons of mustard oil or any cooking oil
  • ½ teaspoon of sugar 
  • Salt
  • 2 tablespoons of butter or ghee 

3 . Step by Step method

         Marination of Chicken 

  • You can use chicken breast or thigh to make this kebab. Chicken breasts are not naturally juicy, but marinating helps to make chicken breasts tender and juicy. Cut chicken breast or thigh into thick pieces.

  • Add chicken pieces, ginger garlic paste, salt, red chilli powder, garam masala powder, black pepper powder, fried onions, cornflour, yoghurt, sugar, and lemon juice in a large mixing bowl. Mix all the ingredients very well. Now add 2 teaspoons of mustard oil; here, I am using mustard oil because of its unique strong flavour. Boti Kebab with mustard oil in it turned out much better in comparison with other oils.

 

  • Leave this marinated chicken in the refrigerator for 2 to 3 hours for better taste.

       For Grilling 

  • Skewer the marinated chicken pieces. For Grilling, I am using wooden skewers. Soaked wooden skewers in normal water for 1 hour or at least 30 minutes before using.

  • Put a little ghee or butter in a hot grill pan or normal nonstick pan and place the skewers on it. Baste with oil or butter at regular intervals. Turn over and repeat. The kababs should be cooked through and slightly charred on the surface.

  • Roast all the skewers on medium to high flame and rotate once or twice. It should take 15 to 20 minutes.

  • Brush the kebabs with butter or ghee and roast on the stove; It will give tandoori flavour to the kebab.

  • Serve hot with rumali roti or biryani or with your favourite dip. You can also serve it with grilled vegetables, flavoured rice, pita bread, or other flatbread.

4. Tips  

  • Before marinating, always pat dry the chicken. This absorbs the extra moisture, which leads to a crisper texture. 
  • Cut chicken into equally thick pieces for evenly cooking.
  • Brushing the kebabs with butter or ghee halfway through helps in achieving a crisper exterior. 
  • The addition of a little sugar will balance the flavour of spices.
  • Soak the wooden skewers in water for an hour before use.
  • Mustard oil is my favourite but you can use whichever cooking oil you have.
