The recipe is simple and easy; you can pick up almost everything at your local grocery store. The recipe is also simple to scale up or down as needed, meaning you can make them in large quantities for parties or gatherings.

 I promise that if you are a tomato fan, this recipe must be on your bucket list. You can also opt to use cherry tomatoes or small tomatoes. They perfectly work well in the recipe and taste so good. One of the most important ingredients of this dish is a good quality of bread. Use a good quality French or Italian loaf or baguette.

The next important ingredient is extra virgin olive oil. Be sure to use the best quality extra virgin olive oil you can find.

Another main ingredient is the fresh and juicy tomatoes, which are of good quality. Use fresh and in-season tomatoes.

2. Ingredients

  • 8 slices of baguette
  • 2 cups chopped fresh tomatoes 
  • 3 to 4 basil leaves
  • 3 to 4 minced garlic
  • 1 tablespoon of extra virgin olive oil
  • 1 teaspoon of black pepper powder
  • 2 tablespoons of grated cheese ( mozzarella, parmesan, cheddar, feta)
  • Salt

3. Step by Step method

Make Tomato Herb Topping

  • Rinse and chopped tomatoes into small cubes. Remove the seeds from the tomatoes if you want. Take the chopped tomatoes in a large mixing bowl.
  • Add minced garlic, chopped basil leaves, black pepper powder, extra virgin olive oil and salt.
  • Mix very well. For a bright, tangy taste, you can add lemon juice or ¼ teaspoon of balsamic vinegar.
  • Cover the tomato mixture in a refrigerator for 30 minutes or up to an hour to give the flavours time to meld.

Make Bruschetta Bread

  • Slice the baguette into thick slices.
  • Heat a pan or tawa and place the slices on it. You can also use the oven to toast the slices.
  • When one side becomes lightly toasted, turn over the slices and toast the other side.
  • Now, place the tomato basil mixture on each toasted bread.

  • Spread grated cheese on top of the bread slices.
  • Place the baguette slices into the oven.
  • Bake at 350 degrees for 10 minutes.

  • Serve Cheese Tomato Bruschetta as a starter or a snack. Enjoy.

4. Tips

  • Use fresh, in-season tomatoes or opt for a different topping.
  • Toast the bread until it is a little crusty on the outside. It doesn’t have to be brown if you don’t want it to be, but it does need some texture.
  • You can add olive, corn, boiled chicken slices, cooked beans, onion, mushroom, and so many more as toppings.
  • I would not suggest keeping the toasted bread in the fridge as the toast will become dense and chewy.
