This veg-grilled sandwich is filled with flavours that will leave you wanting more. It includes boiled potatoes, tomato, capsicum, butter and cheese spiced with green chutney. It’s not filled with any gourmet cheeses, but it packs some serious flavour, and I promise you, you will not go back to eating a basic sandwich after this.
Feel free to change the ingredients to suit your taste and dietary requirements. For example, use brown bread or multi-grain bread for a healthier option. You do have the option to add or skip veggies according to your choice. If you do the filling the night before, add the cheese just before grilling the sandwich.

2. Ingredients:
- 4 slices bread ( white, brown or multi-grain )
- Potatoes
- 1 tomato thinly sliced
- 1 onion thinly sliced
- 1 capsicum thinly sliced
- 2 tablespoons of butter
- 1 tablespoon of black pepper powder
- Sliced cheese
- 2 tablespoons of green chutney
- Seasoning( chaat masala or pizza seasoning)
- Salt

Preparation of green chutney:
- In a mixing bowl, put 1 cup of roughly chopped coriander leaves, 4 green chillies, 1 tablespoon of ginger garlic paste, salt and 2 tablespoons of water.
- Blend or grind the ingredients until smooth. Don’t add too much water.
- Cover and keep the chutney aside; You can refrigerate it for later use.
Preparation of sandwich:
- Boil potatoes and cut into thinly sliced.
- Use good quality soft and fresh bread. You can use any type of bread of your choice.
- Spread a generous amount of butter on the bread.
- Butter makes your sandwich more tastier.
- After butter, spread a thin layer of green chutney.
- Now assemble a layer of potatoes, tomatoes, cucumber, capsicum, and onion sliced.
- Sprinkle Black pepper powder and a little amount of salt on the veggies.
- Cover with cheese slice.
- Seal with another slice of bread.
- Heat the grill pan on a medium flame, put a little butter and place the sandwich.
- Cook on both sides for 5 minutes on medium-low flame.
- When the sandwich turns golden brown and crispy on both sides.
- Take them off from the pan.
- Serve hot with green chutney or ketchup.
