One Pot Veg Biryani ( Easy Recipe For Veg Biryani)

One Pot Veg Biryani is an aromatic, nutritious, colourful and delicious dish. Vegetable Biryani is a rice dish made with Basmati rice, mixed vegetables, seasoning and herbs. This recipe is so easy that you can make it quickly, and this is a crowd-pleaser! It is light, fluffy and a flavourful meal that is ready in no time. So this biryani is a perfect and hearty meal with the goodness of vegetables and fragrant rice.

One Pot Veg Biryani is perfect for lunch and dinner or for a surprise guest. You can also make this on your lazy day or busy day. It’s a myth that making biryani at home is a difficult task, but trust me, once you try this recipe of mine, you will not disappointed. Traditionally, vegetable biryani recipe is completed in several steps, which is a time-consuming and longer process compared to this. This recipe is easy, and no marination or special ingredients are needed for this biryani. You can add your choice of vegetables, nuts and herbs as much as you want. For school lunch or office lunch, this biryani is good to go. It’s a great addition to weekend meals or weeknight dinners. I am making this biryani in a regular pressure cooker on a stovetop.

2. Ingredients

  • 2  cup Basmati rice ( long grain)
  • ¾ cup green peas (100 grams)
  • 8 florets of cauliflower around (100gm)
  • ⅓  cup beans ( 50 grams)
  • ¾ cup carrot ( cut into small cubes)
  • ½ cup potato ( cut into cubes)
  • 4 green chilli
  • 2 bay leaves
  • 1 black cardamom 
  • 2 green cardamom
  • 2 cloves 
  • 1 cinnamon stick (4 cm)
  • 1-star anise 
  • 1 onion thinly sliced
  • 2 teaspoons ginger garlic paste
  • 1 tomato roughly chopped 
  • 1 teaspoon cumin seeds
  • 1 teaspoon red chilli powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon garam masala powder or biryani powder 
  • 1 tablespoon yoghurt
  • A bunch of coriander leaves
  • 2 tablespoons of  Refined oil and ghee mix
  •  Salt.

3. Step by Step method

One Pot Vegetable Biryani is a comfort food at its best. You can make it when you want to cook something quick, easy and delicious. I am going to share a simple way to make this aromatic dish.

Wash and soak basmati rice for 15 minutes.

After 15 minutes, strain the rice of all the water and keep it aside.

While the rice is soaking, cut the vegetables into small cubes. You can add paneer, corn or broccoli too.

In a pressure cooker, heat oil and ghee. Put bay leaves, black cardamom, green chilli, cloves, cinnamon stick, green cardamom, and cumin seeds. Fry for a few seconds until they become fragrant.

Now add sliced onions and saute till they turn golden brown. Add ginger garlic paste, fry for a few seconds, now add chopped tomatoes and cook on low flame for 2 to 3 minutes. Add red chilli powder, turmeric powder, coriander powder, garam masala or biryani masala powder. Cook on a medium flame for one minute. Add yoghurt and mix it.

Add all the vegetables, mix them together, and cook for a few minutes.

Now add soaked rice and add 2cup of water. Add salt to the water.

Cover the lid of the pressure cooker and cook on high flame.

After the first whistle, lower the flame and cook for 3 minutes on a low flame.

Turn off the heat. Open the lid after a few minutes.

Garnish with fresh coriander leaves. Serve hot  Vegetable Biryani with raita.

4. Tips

  • Water and rice will be in the same proportion for pressure cooker cooking.
  • You can add or change vegetables according to your preference.
  • Taste saltines of water while adding the salt to a pressure cooker. If the water does not feel salty, then you need to add more salt.
  • Use good quality of Long grain Basmati rice.
  • Soaked rice before cooking for better texture.
