1. About the recipe

Mutton Kofta Curry is made in stages. First, the kofta is prepared by mixing the spices and then shaped into small balls. This kofta’s unique aspect is that it is not fried before putting it into the gravy. They directly cook into the simmering hot gravy, letting it imbibe all the beautiful flavours of the curry. The Mutton Kofta Curry is extremely flavourful. It is enjoyed with Roti or Rice.

        For Kofta

  • 300 gm mutton minced
  • 1 onion thinly sliced and fried
  • ½ teaspoon cumin seeds
  • ½ teaspoon of red chilli powder
  • ½ teaspoon green chilli thinly sliced
  • ½ cup chopped coriander leaves
  • 1 tablespoon of ginger garlic paste
  • 1 tablespoon of Besan ( gram flour)
  • Salt
  • 1 teaspoon of oil

     For Gravy

  • 1 onion paste
  • 1 tablespoon of ginger garlic paste
  • ½ tablespoon of red chilli powder
  • 1 ½ tablespoons of coriander powder
  • ½ teaspoon of turmeric powder
  • ½ teaspoon methi seeds ( Fenugreek seeds)
  • 1 cup chopped coriander leaves
  • Oil ( Mustard oil or Refined oil)
  • 2 to 3 green chilli
  • Salt

3 . Step by Step method

   Making Kofta Balls

  • Mix all the kofta ingredients to make kofta in a bowl.
  • Mash the mixture with your hands for 2 to 3 minutes.
  • Make a small-sized ball from the mixture and keep it aside

    Making Gravy

  • Heat mustard or refined oil in a pan for the gravy.
  • Add ½ teaspoon of methi seeds and fry for a few seconds.
  • Now add ginger, garlic paste onion paste, and fry for 30 seconds on medium heat.
  • Add red chilli powder, turmeric powder and coriander powder, and fry for a few minutes on medium heat.

  • You will notice that oil is separating from the gravy; add 1 cup of warm water at this point. Add salt to the gravy.
  • Once the gravy starts to boil, add kofta to the simmering gravy.

  • Cook on low heat for 10 -12 minutes until kofta are cooked.
  • Add more water if the gravy is too thick; you can balance the consistency of the gravy according to your choice.

  • Garnish with fresh coriander and green chillies.
  • Serve hot with plain Rice or Roti.

4. Tips

  • The addition of besan will help the koftas to hold their shape and prevent them from falling apart while cooking.
  • If you don’t have besan, use eggs, breadcrumbs, and grated potatoes in the kofta mixture as binding ingredients.
  • Cook the gravy properly on medium heat. Add the koftas to the gravy and cook on low heat; this will allow the flavours to meld and the koftas to absorb the flavour of the sauce.
  • Garnish with fresh coriander leaves. This will add a pop of freshness and colour to the dish.
