1. About the recipe
I am sharing a detailed recipe with photos for making simple and tasty pulao. In winter, peas and carrots are in season; they are sweet and fresh, but you can also use frozen peas and carrots. I am making this pulao with these fresh, colourful and sweet veggies.

2. Ingredients:
- 2 cups basmati rice
- 1 cup green peas ( frozen or fresh)
- 1 cup grated carrots
- 3 tablespoon ghee
- 2 teaspoon cumin seeds
- 1 bay leaf
- 4 cloves
- 1 teaspoon black pepper
- 2 to 3 green chillies
- Salt
- 4 cup water
- Fried onions for garnish ( optional)
3 . Step by Step method:
Matar Gajar Pulao can be made in a pan or a pressure cooker. Here I am sharing with you both ways.
Matar Gajar Pulao in Pan:
- Rinse the rice 2 to 3 times until the water clears the starch. Soak the rice for 15 minutes.
- Peel and wash carrots. Grate carrots from the grater or cut them into very thin slices.
- Put ghee and oil in a pot or pan ( you can make this rice using only ghee or refined oil).
- Add zeera, cinnamon stick, clove, bay leaves, and green chillies.
- Saute for a few seconds.
- Now add 4 cups of water (Use the same cup for measuring rice and water) in a pan on a high flame.
- When the water starts boiling, add peas and grated carrots.
- Stir well; now add soaked basmati rice and salt.
- Taste the saltiness of the water, and adjust the salt according to the taste of the water. Cover the pot or pan and cook on low flame for 15 minutes.
- Matar Gajar Pulao is ready. Garnish with fried onions at the time of serving.
Matar Gajar Pulao in a Pressure Cooker
- In a pressure cooker, put ghee and refined oil. Add cumin seeds( zeera), cinnamon sticks, cloves, bay leaves, and green chillies. Fry all the spices for a few seconds.
- Add green peas, grated carrots and soaked rice to the pressure cooker. Stir them and add the same amount of water as the rice. Add salt according to your taste. Cover the lid and cook on high flame. After the first whistle, cook on low flame for 3 minutes and turn the stove off.
- Open the lid after 5 to 10 minutes; garnish with fried onions or chopped coriander, leave and enjoy with your favourite.
4. Tips:
- Fresh carrots and peas are sweeter and release more flavour, especially the winter crop. You just can’t find that same taste in frozen vegetables.
- Basmati rice is an aromatic long-grain rice that tends to absorb less water while cooking and takes less time.
- Remove the whole garam masala before serving.
- Fried onions can also be used in garnishing.
