Chicken Keema Naan is a meal itself. Keema Naan is an oven-baked bread stuffed with spicy chicken mince. Traditionally it is baked in a clay oven. Chicken Keema Naan comes with great variation. You can add cheese or your choice of spices. They are soft on the inside and crispy on the outside. It is very much popular in Indian, and Pakistani restaurants.

1. About the recipe:
In the restaurant, keema naan is cooked in a tandoor ( clay base oven), but I am cooking this dish on a pan and oven to get the same texture as the Naan. You can make this Keema Naan using raw and cooked mince both. Here I am sharing with you a very simple recipe for this bread with readily available ingredients.

2. Ingredients for Naan :
- 500 gm plain flour
- 1 egg
- 2 tablespoons of yoghurt
- 7 gm instant yeast
- 1 tablespoon of sugar
- ½ cup milk
- 1 teaspoon of salt
- 1 tablespoon of refined oil
- 1 tablespoon of onion seeds ( optional)
- Butter
Ingredients for stuffing
- 500gm of chicken mince
- 1 tablespoon of ginger garlic paste
- 1 Onion finely chopped
- 1 teaspoon of garam masala powder
- 1 teaspoon of coriander powder
- 1 tablespoon of chopped green chillies
- ½ cup chopped coriander leaves
- 1 tablespoon spoon of lemon juice
- 1 teaspoon of red chilli powder
- Salt
3. Step by Step method:
Preparation of Stuffing
- For this recipe, you need minced chicken; store-bought is also good. In a hot bottom pan or kadhai, put little oil and add one tablespoon of ginger garlic paste, and fry for a few seconds.
- Add chicken mince, red chilli powder, garam masala powder, coriander powder, chopped green chillies and salt.
- Mix all the ingredients in a pan and cook on a medium flame for 10 minutes.
- Cook the chicken mixture until it turns dry and golden brown.
- Taste the stuffing at this stage and adjust the spices according to your preference.
- Sprinkle chopped onion, coriander leaves, chopped green chillies and lemon juice.
- Mix well and Remove from the heat.
- Keep aside this mixture.
Preparation of dough
- This dough recipe is super easy without any fuss. You need essential ingredients. Whisk the warm water, yeast, and sugar in a small bowl. Cover and leave for 5 minutes.
After 5 minutes
- In a large mixing bowl, add plain flour, salt.
- Mix it well.
- Now add beaten egg, yoghurt, activated yeast, and refined oil.
- Use warm milk to knead the dough.
- With lightly floured hands, knead the dough for 3 to 4 minutes.
- After kneading, the dough should still feel a little soft.
- If your dough is bouncing back, it’s ready to rise.
- Lightly grease another bowl with oil and place the dough in the bowl, turning it to coat all sides in the oil.
- Cover and allow the dough to rise at room temperature for 1 hour.
- When the dough is ready, punch it down to release any air bubbles. Divide the dough into a small ball size (4-inch circle). Place a portion of stuffing in the centre.
- Now pinch the corners together. Continue till the mince is completely covered.
- Form a ball and ensure the stuffing is not visible and completely covered.
- Repeat the same process with the remaining dough balls. Dust the surface with plain flour and flatten the stuffed dough into a naan with the help of a rolling pin.
- As your stuffing becomes visible from the top as you roll naan, that’s OK.
- Make holes all over the dough using the sides of a rolling pin or your finger. Brush the top with milk and sprinkle onion seeds.
- Heat a pan or skillet and place the Naan over it.
- Cook the bottom of the Naan on a medium flame for 5 minutes.
- Now transfer the Naan to the preheated oven to cook from the top. Place the Naan on the grill mode of the oven on a medium rack for 5 to 7 minutes until it turns golden brown in colour.
- Once Naan is cooked , place it on a plate and brush it with melted butter .
- Serve hot with green chutney and onion rings.
4 . Tips:
- You can make it more spicy by adding more spices to your stuffings.
- I am using chicken mince in this recipe, but you can make it with lamb mince, soya mince or paneer.
- Instead of onion seeds, you can use sesame seeds or poppy seeds.
- This recipe can be made with both raw and cooked mince.
