Tandoori Chicken ( Step by Step method with photo)

Tandoori Chicken is one of the most famous chicken dishes all over the world. It is wildly popular among chicken lovers.  Legs and thigh marinated in yoghurt base spices with lemon juice and cooked on tandoor. Tandoori chicken is traditionally made in a tandoor or clay oven, but here I will share with you how to make it in a regular oven.

  1. About the recipe :

 Tandoori chicken is a unique, delicious, spicy, excellent, and smoky dish you will love. Traditionally,  it is prepared by roasting or grilling the marinated chicken in a clay oven or tandoor. Here I am sharing with you a   very easy recipe for this dish with readily available ingredients, not using any tandoori masala or any food colour.

 Marination time: 4 hours

 Cooking time. : 30 minutes 

 2. Ingredients:

  • 500 gm chicken
  • 2 tablespoons of ginger garlic paste
  • 1 lemon juice
  • 1 cup thick yoghurt
  • 1 tablespoon of Kashmiri red chilli powder
  • 1 teaspoon of red chilli powder
  • powder
  • ½ teaspoon of turmeric powder
  • ½ tablespoon of garam masala powder
  • ½ tablespoon of cumin powder
  • ½ tablespoon of black pepper powder 
  • 2 tablespoons of gram flour 
  • Salt 
  • Mustard oil
  • 50 gm butter

 

    3.  Step-by-step method 

  •  I am using leg, and thigh joined cuts in this recipe, but you can also use chicken breast parts. 
  • Make cuts on the chicken using a sharp knife. It will help in better marination, and your tandoori chicken will become soft and succulent.

  Preparation of the first marinate

  • In a large bowl, take 2 tablespoons of ginger garlic paste, lemon juice, salt, Kashmiri red chilli powder ( you can use any chilli powder)
  • Add chicken and mix it very well.
  • Cover the bowl with a plastic cover and leave for 45 minutes.

Preparation of the second marinate

  • Roast gram flour in a small pan or kadhai for 4 to 5 minutes; turn off the flame.
  • Add mustard oil, cumin powder, garam masala powder, turmeric powder and black pepper powder. Add this mixture to the marinated chicken.

  • Now add thick yoghurt to the marinated chicken.

  •  Mix all the ingredients and leave for 2 to 3 hours.

  • Heat the grill and place the chicken pieces on the rack.

  • Grill the chicken in the oven for 30 minutes.
  • Turn the chicken in between the grilling process. Grill the chicken pieces until lightly charred and completely cooked.
  • Your Tandoori chicken is ready to serve. Drizzle with some butter.
  • Tandoori chicken is very good to go with onion rings and mint chutney.
  • You can serve it with Paratha, Naan or pulao.

  4.  Tips:

  •  It is best to marinate chicken as long as you can for better flavour and juicier chicken.
  • Here I am using Kashmiri red chilli powder for bright red colour, but you can also use any chilli powder of your choice.
  •  The use of gram flour will help in the binding of all the ingredients.
  • Do not overcook, as this causes the chicken to go dry.
  • Drizzling butter will increase the flavour.
  • Place the dripping tray under the rack to collect the dripping over it.
