1. About the recipe

This is definitely a relatively healthy recipe for Orange Oatmeal Cake compared to others. Infused with the flavours of real juicy oranges, this spongy orange Oatmeal Cake is intoxicatingly aromatic and delicious. It is made with a few basic ingredients commonly available at home. All the ingredients amalgamate amazingly to create this stunning Orange Oatmeal Cake. The great thing about this cake is that it is very light as not much butter or oil is needed in the recipe. You won’t feel heavy after eating a slice of this orange Oatmeal Cake. Feel free to frost the cake with orange whipped cream if you want more sweetness. However I prefer to eat it plain slice of cake with a cup of tea. This recipe makes a medium-sized cake for 3 to 4 people.

2. Ingredients

  • ½ cup old-fashioned oats 
  • ½ cup all-purpose flour 
  • ¼ cup sugar 
  • ½ teaspoon baking soda 
  • 2 tablespoons salted butter 
  • 2 eggs 
  • ½ cup orange juice 
  • A few drops of vanilla extract 
  • 1 tablespoon of orange zest 
  • ½ cup raisins (optional)
  • Thinly Sliced Orange 

3. Step by Step method 

  • First, let’s start by simmering old-fashioned rolled oats in orange juice. This method infuses the oats with a zesty orange flavour. Place orange juice and oats in a small-sized pan and cook on medium flame until the oats have softened.
  • Once the oats mixture is ready, take it off the heat and allow it to cool down.
  • In another mixing bowl whisk together all the dry ingredients __ flour, sugar, baking soda, orange zest, and raisins.
  • In a separate bowl mix eggs, melted butter and vanilla extract. These wet ingredients will help give the cake a soft and moist texture.
  • Combine both mixtures ( dry and wet) and then fold in the cooled orange-infused oatmeal mixture.
  • Mix all the ingredients very well.
  • Transfer the batter to a lined or greased baking dish. Tap the pan from the sides or tap the bottom of the pan on the countertop to remove excess air bubbles. Top with thinly sliced orange & Bake it at 180 C or 350 F for about 25 to 30 minutes.
  • Check the cake with a toothpick or bamboo skewer and it should come out clean. If there is any batter sticking on the skewer, then bake for some more minutes.
  • Orange Oatmeal Cake is ready to be served.
  • Slice the orange oatmeal cake and serve as a sweet dessert snack or with tea or coffee.

                 

4. Tips

  • Measuring flour correctly is very crucial for achieving the right cake Spoon the flour into a measuring cup until it’s slightly heaping, then level it off with straight-edged utensils.
  • If you are making orange juice from scratch then use medium-sized juicy ripe oranges. Make sure you remove the seeds before juicing them. Sieve the juice to ensure that the orange fibres do not get added to the cake batter.
  • If the top of the cake starts browning too much, cover the top with aluminium foil or parchment paper while baking.
