Omelettes are great for breakfast, lunch or dinner. Sometimes, it can make a complete meal. It is easy, healthy, nutritious and can be prepared in great variations. Whenever I run out of ideas for lunch and dinner, I tend to default to something simple like the trusty Masala Omelette.

Nothing is more filling, delicious and nutritious than a protein-packed omelette, any time of the day. Today, I am sharing with you the recipe for a Masala Omelette. This easy, fail-proof recipe is truly the best. It’s a little spicy and can be filled with vegetables, shredded chicken or cheese, depending on your preference. Best of all, they can be made in just a few minutes, so you don’t have to cook too much!Â

2. Ingredients
- 2 eggs
- 1 tablespoon of finely chopped onion
- 1 tablespoon of chopped capsicum
- 1 tablespoon of chopped tomatoesÂ
- 1 tablespoon of chopped coriander
- 2 chopped green chillies
- ½ teaspoon of turmeric powder
- ½ teaspoon of black pepper powderÂ
- Salt
- 1 tablespoon of oilÂ
3. Step by Step methodÂ
- Chopped onion, capsicum and tomato in small pieces; add coriander leaves, green chillies, black pepper powder, turmeric powder and salt.
- Break eggs in a separate bowl. Beat the eggs until frothy.
- Add beaten eggs to the vegetables and masala mixture.
- Mix it well.
- Heat oil in a pan on medium flame. I am using refined oil in this recipe, but butter or olive oil is a good substitute.
- Â Do not let the pan be very hot; it will burn the omelette without cooking inside.
- Pour the egg mixture and allow to cook until set on a medium flame.
- Flip it to the other side when the base firms up, and cook until the egg and veggies are cooked.
- Eggs are delicate and will continue to cook even after the omelette is out of the pan.
- Serve hot with bread, Paratha or Poori.
4. Tips
- To keep away the egg smell, use a good amount of oil.
- Add mushroom, cheese or shredded chicken to the egg mixture.
- If you want something spicier, add a little red chilli powder.
- Omelettes are the perfect filling for sandwiches and perfect for lunch boxes.
