Potato wedges are a classic side dish, appetizers made with potatoes and seasoning. These are delicious, crispy and flavourful snacks. Mostly, these are baked but can also be deep-fried or air-fried. Today, I am sharing a frying version of these wedges.

1. About the recipe :Ā
Potato tastes great when roasted, fried or baked. Potato wedges make for a good finger food snack, a party snack. These spicy crisp potato wedges are delicious on their own but also go well with any dips like chilli sauce, ketchup or guacamole.

2. Ingredients:
- 300-gram potatoes
- 1teaspoon of red chilli powder ( optional)
- Ā½ teaspoon of basilĀ
- Ā½ teaspoon of thyme
- Ā½ teaspoon of oregano
- Salt
- 1 teaspoon of black pepper powder
- 1 tablespoon of plain flour
- 1 tablespoon of cornflour
- Oil for deep fryingĀ
3. Step by Step method :
- Wash potatoes well and remove all dirt and mud. Peel the potatoes and cut into lengthwise.
- Cut each potato into two halves and then slice each half into 2 to 3 wedges.
- Dip all the potato wedges into cold water for 30 minutes. After 30 minutes drain all the water from the potatoes completely. Wipe them dry with a kitchen towel or air dry.
- Mix red chilli powder, oregano, thyme, basil, black pepper powder and salt.
- Mix the seasoning very well. At this stage, you can check salt. Add flour and cornflour to the seasoning.
- Add a few drops of oil to the potato wedges and coat them well.
- Sprinkle the seasoning on potato wedges, and coat all of the potatoes well with the seasoning.
- If the seasoning is too dry, sprinkle a little water.
- In a wok or kadhai heat oil on a medium-high flame. Gently put potato wedges in the oil.
- Fry the potatoes on a medium-high heat.
- Turn over the potatoes when one side of the potato wedges is lightly golden.
- Fry till crispy and golden in colour.
- Remove the fried potato wedges from the oil.
- Place these wedges on a kitchen towel.
- Serve hot potato wedges with your favourite dips or sauce.
4. Tips :
- You can opt for shallow fry for the potato wedges if you want to use less oil.
- Corn flour can easily be replaced with rice flour or chickpea flour.
- Cut the potato wedges in equal size for evenly cooking.
- Herbs can be easily changed according to your taste buds. You can sprinkle chaat masala, too.
- You can bake potato wedges or air fry, too.
