Chicken Fry is a simple and easy dish consisting of chicken pieces marinated in spicy yoghurt and then deep fried. There are many variations to make chicken fry and many variations to serve it. This recipe produces a crunchy exterior with moist chicken on the inside. The absolute perfect chicken, in my opinion.

1. About the recipe
This chicken fry recipe gives you crispy chicken from the outside and juicy chicken from the inside. Firstly chicken is marinated in spicy yoghurt and cornflour mixture and then deep fried. You can add spices according to your taste. Curry leaves or chopped coriander leaves can also be added. Here I am sharing with you a very simple recipe for this dish.

2. Ingredients:
- 500 gm chicken pieces
- 2 tablespoons of ginger garlic paste
- 1 cup curd
- 2 tablespoons red chilli powder
- 1 teaspoon of garam masala powder
- 1 teaspoon of cumin powder
- 1 teaspoon of coriander powder ( optional)
- 1 teaspoon of chaat masala powder
- 3 tablespoons of cornflour
- 1 lemon juice
- Salt
- Oil for frying
3. Step by Step method:
- Clean and wash chicken pieces. Add salt, ginger garlic paste, lemon juice and red chilli powder to the chicken pieces. Mix them well.
- Leave marinated chicken for an hour.
- Add yoghurt lightly in a bowl and garam masala powder, cumin powder, coriander powder, and chaat masala powder.
- Add this mixture to the marinated chicken.
- Now add cornflour powder to the marinated chicken.
- Leave marinated chicken for another hour.
- Put oil on a hot flame in a kadhai or deep-bottom pan.
- When the oil is hot, drop the chicken pieces one by one. Make sure chicken pieces are coated well with cornflour.
- Cook on a medium flame for 15 minutes. Keep stirring until the chicken turns golden brown and crispy.
- Remove them from the pan. Sprinkle little chaat masala powder.
- Serve hot with your favourite dip.
You can enjoy chicken fry with dal and rice also. This combo is amazing.
4. Tips:
- You can make this recipe using boneless chicken, too.
- The longer the chicken is marinated, the more flavoursome it will be.
- Mix rice flour with cornflour for extra crispiness.
- Make sure to fry the chicken in medium-hot oil. It will be cooked only on the outside if you fry it in hot oil and it will be undercooked and will soak oil if you fry it in cold oil.
